Which certificate does your site need?
Three questions decide it, and the fourth answer is that you should ask us.
One domain name?
A single site — shop.example.com, or example.com on its own — takes a single-domain certificate. That is the common case and the cheapest one.
A domain and all its subdomains?
A wildcard certificate covers a domain and every subdomain under it with one certificate and one renewal, instead of one of each per hostname.
A checkout, or an organisation to verify?
Extended Validation checks the organisation behind the site, not only the domain. It is the level to ask for where money changes hands or where being impersonated would be expensive.
